  • Olive or vegetable oil
  • Cooking spray
  • Whole wheat tortillas
  • Cheddar cheese

Procedure

  • Take some oil in a nonstick pan and cook chopped vegetables in it over a medium to high flame for 7 minutes, or until softened
  • Remove the vegetables after they become soft
  • Use cooking spray to coat the same pan and place one tortilla in the pan
  • Evenly spread some cheese over the tortilla 
  • Layer vegetable mixture over the cheese
  • Again spread some cheese over the vegetables
  • Place the second tortilla over the cheese
  • Cook for 2 to 3 minutes until both sides turn golden
  • Cut the quesadilla into triangles and serve hot

Lentil Bolognese

You may assume it to be a non-vegetarian sauce but it is not. This easy-to-cook vegetarian sauce recipe is as healthy and tasty as meat bolognese.

All you need is

  • Olive or cooking oil
  • Chopped onion and garlic
  • Thinly sliced red bell pepper and mushrooms
  • Carrot
  • Red wine
  • Diced tomatoes 
  • Vegetable broth
  • Drained green lentils 
  • Ground paprika
  • Dried basil, oregano, and mixed herbs
  • Ground nutmeg

Procedure

  • Take olive oil in a pan and heat it over medium heat
  • Cook onion and garlic for 5 minutes or until tender
  • Add red bell pepper and carrot in a pan and cook for 5 minutes
  • Add mushrooms and cook for 2 minutes
  • Pour some red wine into the pan and simmer for about 1 minute
  • Add diced tomatoes and vegetable broth
  • Bring sauce to a boil
  • Lower the flame and steam for 10 to 15 minutes until flavors blend properly
  • Add lentils, paprika, basil, oregano, dried herbs, and nutmeg
  • Cook for 5 minutes until lentils are heated thoroughly 

You can serve Bolognese sauce with pasta or potatoes. 

Sweet Potato Burritos

Burrito is a popular Tex-Mex cuisine that consists of a flour tortilla packed with meat, beans, and salsa. However, sweet potato burritos are the best combination of delicious kidney beans and fatty sweet potatoes. And the best thing is that they can be cooked and frozen for future usage.

All you need is

  • Vegetable oil
  • Chopped onion 
  • Minced garlic
  • Drained kidney beans
  • Water
  • Chili powder
  • Prepared mustard
  • Ground cumin
  • Cayenne pepper
  • Soy sauce
  • Mashed cooked sweet potatoes
  • Flour tortillas
  • Cheddar cheese

Procedure 

  • Preheat oven to 350° F 
  • Heat oil in a frying pan
  • Saute onion and garlic until tender in heated oil
  • Mash beans into the onion mixture
  • Put some water and heat it for 2 to 3 minutes
  • Remove from flame and add and stir soy sauce, chili powder, mustard, cumin, and cayenne pepper
  • Place bean mixture and mashed sweet potatoes evenly between the tortillas
  • Place the cheese over top
  • Fold tortillas burrito-style around the fillings and place them on a baking sheet
  • Bake in the oven for 12 minutes
  • Serve hot

Vegetable Stir Fry

If you want to have a lot of vegetables on your plate, then vegetable stir fry is a perfect dish when looking to find vegetarian recipes.

All you need is

  • Vegetable oil
  • Chopped ginger root
  • Crushed garlic
  • Cornstarch
  • Vegetables of your choice ( broccoli, julienned carrots, snow peas, green beans, etc. )
  • Water
  • Soy sauce

  • Salt

Procedure 

  • Mix ginger, garlic, cornstarch, and vegetable oil in a large bowl until cornstarch is dissolved
  • Add and toss broccoli, carrots, snow peas, and green beans
  • Heat vegetable oil in a pan over a medium flame
  • Add vegetable mixture and cook and stir for 2 minutes
  • Add some water and soy sauce and stir well
  • Add onion, salt, and ginger
  • Cook and stir vegetables until softened yet crisp
